Ingredients & Method
Below

Fresh Garden Rolls with Roasted Red Pepper and Avocado

Place ingredients on the rehydrated round rice paper and fold like a burrito

 

Serve with:
Spicy Lime Dressing

 

 

Combine and serve

Ingredients:
- 1 package thin rice stick, rehydrated
- 3 red peppers, roasted and peeled
- 2 avocados, peeled and sliced
- fresh leaves of basil, mint and cilantro
- 24 round rice peppers, rehydrated

Spicy Lime Dressing
- 3 T. fish sauce
- Juice of 2 limes
- 1 t. crushed red chilies
- 2 1/2 T. sugar


Curried Gazpacho with Cucumber Raita
Combine and blend

 

 

 

 

 

 

 

 

 

 

Mix, chill and serve.

Ingredients:
- 3 cups peeled and chopped tomatoes
- 1 cup chopped onions
- 1 cup peeled and chopped cucumber
- 1 t. crushed garlic
- 1 t. chopped ginger
- 1 1/2 T. toasted curry powder
- 1 t. crushed red chilies (sambal)
- juice of 1 lime
- 1/4 cup mint leaves
- 1/4 cup basil leaves
- 1/4 cup cilantro leaves
- 1/2 cup water or vegetable stock (if necessary)
- basil leaves for garnish

Raita:
- 1 cup strained yogurt
- 1 1/2 t. toasted cumin
- 1 T. lemon juice
- 1 cup diced cucumber
- salt and pepper to taste


Grilled Banana
Place the whole bananas on a hot grill and turn when grill marks appear (about 4 minutes). Peel and serve with coconut sorbet and chocolate caramel sauce. Ingredients:

Mango Puree with Aged Sherry Vinegar
Blend all ingredients Ingredients:
- 1 cup mango, pureed
- 3 T. aged sherry vinegar
- 1/2 cup olive oil
- salt and pepper to taste

Soy Maple Dressing
Whisk together all ingredients Ingredients:
- 1 cup soy sauce
- 1/2 maple syrup
- 1 T. of diced red onion
- 1 t. fresh diced ginger
-1/2 t. crushed garlic

Pink Grapefruit Dressing
Whisk together all ingredients Ingredients:
- 1 cup of grapefruit juice
- 1/3 cup of honey
- 1 T. chopped cilantro
- salt and pepper to taste

Warm Mushroom and Goat Cheese Salad
SautÈ mushrooms. Add lemon juice and black pepper. Add butter. Toss with greens. Serve goat cheese on crostini or crumbled on salad. Ingredients:
- Choice of greens
- 1 cup mixed mushrooms, diced
- 2 oz. goat cheese
- zest of 1 lemon
- 2 oz. butter
- ground black pepper, to taste
- juice of one lemon
