Mexican Corn Salad with Smoked Gouda

Serves 4

Salad:

2 ears fresh corn

2 tablespoons canned diced green chiles

1/3 cup diced red or green bell pepper

2/3 cup chopped tomatoes

1/3 cup diced red onion

3 ounces smoked Gouda cheese
(or smoked sharp Cheddar)


Dressing:

1 tablespoon fresh lemon juice

1 tablespoon rice vinegar

2 tablespoons any unrefined oil

1/2 teaspoon chili powder

Dash of cayenne

3/4 teaspoon salt

Cut corn kernels off the cob. Add vegetables to corn.



Cut cheese into small cubes (smaller than 1/2 inch) and add to vegetables.



In a separate bowl or jar, combines the dressing ingredients.



Pour dressing over vegetables and toss until all vegetables are well coated. Serve.

When I first came up with this salad I was so pleased that I made it for everyone who came around the house. Sadly, we ate so much of it, it may be a while before we indulge again. Meanwhile, it has become a staple at summer buffets and picnics with my friends and family. Fresh crispy, sweet summer corn is the key to success with this salad.
